The sustainability class at Summit Academy is now growing organic salad greens, microgreens, basil, and parsley in our new 4-tier EvanLee grow rack. We had our first harvest of microgreens on Monday March 11th, which was enjoyed as part of the Summit Academy salad bar during lunch. Students in the class are not only growing produce from seed to table, but are also getting the experience of running a small business. The class created a business plan which is in the early stages of implementation. The class plans to sell part of our produce to the district food services department to be served in school meals. We look forward to the many opportunities that our new growing system will offer to create meaningful and healthy learning opportunities.
